  • Good heat stability

    Steviol glycosides are an ideal high-intensity sweetener for baked goods and snacks. According to a stevia in food study conducted by Dr. Gerhard Kroyer, solid stevioside at elevated temperatures for 1h showed good stability up to 120C whilst temperatures exceeding 140C led to degradation of stevioside.*
